Ingredients:
- Leftover roast chicken
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 400 g can chopped tomatoes
- 960 ml chicken stock
- 5 g thyme
- Salt and pepper to taste
Method:
Instructions: In a large pot, sauté the onion, carrots, and celery until softened. Add the chopped tomatoes, chicken stock, and thyme. Bring to a boil. Add the leftover roast chicken, reduce heat, and simmer for 20 minutes. Season with salt and pepper to taste. Serve hot.
Recycling Tip; Use chicken bones to make bonemeal to feed plants and or add extra minerals to pet food; clean the bones off under running water, pat dry, roast in the oven at 140 C degrees for 1 hour, allow to cool and grind in coffee grinder to make a fine powder. Add to water to feed plants or sprinkle on pet food for a nutrient boost.
